Oven-Roasted Corn on the Cob

Ingredients

  • Corn
  • Butter (choose olive oil for a healthier alternative)
  • Salt
  • Pepper
  • Herbs and toppings of your choice

Direction

  • Preheat your oven to 350 F.
  • Mix oil, herbs, pepper, and salt in a small bowl. 
  • Spread the mixture over corn.
  • Wrap each corn in aluminum foil and place it all on a baking sheet. 
  • Roast corn for about 40 minutes. Make sure you turn them upside down after 20 minutes.
  • Take out the corn and open the foil to expose the corn.
  • Now, put it back in the oven and broil for 2-3 minutes. 
  • Serve with butter on the top. Sprinkle more pepper and salt as desired.

  • 4-6 ears fresh corn
  • For the topping: Sea salt, butter, lime wedges, red pepper flakes
  • Butter
  • Vegan ranch

Direction

  • Pull back the husks, remove the silks and close the husks back over the cob. 
  • Soak it in cold water for 10 minutes. Drain and pat dry.
  • Heat your grill to medium-high heat, and place the corn on it while turning every 5 minutes. 
  • After 15 minutes, remove the cob from the grill and tie back the husks. 
  • Serve with any healthy and savory toppings of your choice.
